Personally, I think Dryden has a better claim on using a moose as a town mascot, The Jaw's name not withstanding.
Dryden is in the Canadian Shield, its economy based around a pulp mill. To feed a pulp mill, you need trees -- lots of them. Moose like trees, especially with some muskeg-y ground thrown in. Drive the Trans-Canada at night through there and you'll see what I mean. :)
Needless to say, Moose Jaw is not exactly great moose country. It is in the middle of hardcore prairie. Proghorn antelope would find it far more at home.
However, should you find yourself driving down Highway One some day, check out The Jaw's downtown -- exceptionally well preserved, I say!
Once upon a time, it had a kickass Thai resto named Nit's, which had some of us chowhound-inclined Reginans driving the 120 km round-way trip pilgrimmages, with our city sadly lacking (for a time in the early 1990s, Regina functioned without an Indian restaurant. It's gotten better since. :) ).
